Let's begin with the most important aspect of being a member on our team: providing un-paralelled customer service with an infectious and friendly smile.

We like to be over board and are not afraid to be sort of obnoxious about it. We want our team to be infected with the "happiness" disease! It needs to be infectious. Pharell Williams "happy" song needs to be the anthem of our internal environment. So much so that it bubbles up and bubbles over. No one should ever be able to come up to our counter and leave without a smile! This is our company culture.

We are so serious about this, that it we have to remind you to smile when you are at work more than 2 times we will have to let you go!

Each and every team member of ours MUST have the professional maturity to leave their personal life behind and put on a happy face while on the clock. We can't stop their. One more thing is a requirement: learn the first names of those who frequent the cafe. Every customer who is a regular of ours must be greeted by his or her first name along with that infectious smile of yours!

Espresso

Double Espresso

Also known as a doppio. Two shots of espresso, approximately 2 ounces. Click here for a detailed video about basics of pulling an espresso shot.

Americano

Also known as a "long black." Short is made with 1 shot of espresso and 10 ounces of hot water. Tall is made with 2 shots of espresso and 12 ounces of hot water. Click here to watch a quick video on how to make an americana.

Steamer

A steamer is simply steamed milk with a desired flavor shot. Click here to watch a quick video on how to steam milk correctly.

Flat White

Espresso and steamed milk with no foam. A true short is made with 1 shot of espresso and about 3 ounces of milk. Tall is made with 2 shots of espresso and about 6 ounces of milk. However, most customers are really ordering a no-foam latte. Be sure to ask them if they want a true flat-white or a latte with no foam. Watch this video on how to prepare a flat-white.

Latte

Espresso and steamed milk with a little foam. Short is made is 1 shot and 8 ounces of steamed milk with a little foam on top. Tall is made with 2 shots of espresso and 12 ounces of steamed milk with a little foam on top. Click here for a video on how to prepare a caffe latte.

Cappuccino

Espresso, steamed milk and foam. Short is made with 1 shot of espresso, 8 ounces of milk and 1 inch of foam. Tall is made with 2 shots of espresso, 11 ounces of steamed milk and 1 inch of foam. Watch this video to learn how you can make the perfect cappuccino.

Caramel Macchiato

Vanilla, steamed milk, espresso, caramel drizzle. Short is made with 2 pumps of vanilla, 8 ounces of steamed milk, little foam, 1 shot of espresso and caramel drizzle on top. Tall is made with 3 pumps of vanilla, 10 ounces of steamed milk, little foam, 2 shots of espresso and caramel drizzle on top.

Hot Chocolate

Premium cocoa sauce, steamed milk and a little foam. Short is made with 3 pumps of cocoa, 10 ounces of steamed milk and a little foam. Tall is made with 4 pumps of cocoa, 12 ounces of steamed milk and a little foam. Make sure the cocoa is well stirred in the milk.

Macchiato

A true macchiato is a double shot of espresso with a dollop of foam on top. Since the word macchiato means "marked," we need only to "mark" the espresso with a small amount of foam. Here is a video on how to prepare a macchiato.

Cafe Au Lait

Brewed coffee and steamed milk. Also known as Caffe Misto. 60% brewed coffee and 35% steamed milk in a cup with a dollop of foam. Click here to watch a quick video on how to prepare a Cafe Au Lait.

Mocha

Espresso, cocoa, steamed milk and a little foam. Short is made with 1 shot of espresso, 2 pumps of cocoa, 8 ounces of steamed milk and a little foam. Tall is made with 2 shots of espresso, 3 pumps of cocoa, 10 ounces of steamed milk and a little foam. Watch this video to learn how to prepare a caffe mocha.

Breve Latte

Flavored Latte

Flavor shot, espresso, steamed milk and foam. Short is made with 2 pumps of chosen flavor, 1 shot of espresso, 8 ounces of steamed milk and little foam. Tall is made with 3 pumps of flavor, 2 shots of espresso, 11 ounces of steamed milk and a little foam.

Flavored Steamer

Flavor shot, steamed milk and little foam. Sort is made with 2 pumps of choses flavor, 10 ounces of steamed milk and a little foam. Tall is made with 3 pumps of choses flavor, 12 ounces of steamed milk and a little foam.

Brewing Coffee


Drip Coffee

Everyday we brew six different coffee blends for the self-serve coffee station. Our everyday staples are Italian Roast, Papua New Guinea organic and Jamaican Me Crazy as well as a Finger Lakes Decaf. We then also have two blends that we change on a daily basis. One is flavored and the other is a single origin.

Brewing Guidelines for 1.5 Gallon Coffee Urns

We brew the Italian Roast, Papua New Guinea and the Jamaican Me Crazy in the 1.5 gallon urns. Here are the steps:

  1. Set the grinder to "auto drip" and grind 6oz of whole bean coffee. * Jamaican Me Crazy has to be 7oz.
  2. Put the coffee filter in the brew basket and pour the ground coffee in the filter. Place another coffee filter on top of the coffee. This ensure that no coffee grinds get in the brewed coffee.
  3. Set the brewer to 6 minutes of brewing. Place the brew basket in it's slot on the brewer
  4. Place an empty coffee urn beneath the brew basket and turn the lever on the brewer to "brew." Be sure to have the top removed from the coffee urn before you start brewing coffee so that the coffee doesn't spill over the urn.
  5. Place the top back on the urn before putting the urn out on the self-serve coffee station.

Repeat steps 1-5 for each coffee

BREWING GUIDELINES FOR 2.2 Liter COFFEE Airpot

We brew the Finger Lakes Decaf everyday. We alternate between a house blend or a single origin daily. Lastly, we alternate different flavors for the flavored airpot coffee.. Here are the steps:

  1. Set the grinder to "auto drip" and grind 3oz of whole bean coffee.
  2. Put the coffee filter in the brew basket and pour the ground coffee in the filter.
  3. Set the brewer to 2.8 minutes of brewing. Place the brew basket in it's slot on the brewer
  4. Place an empty coffee airpot beneath the brew basket and turn the lever on the brewer to "brew." Be sure to have the top removed from the airpot before you start brewing coffee so that the coffee doesn't spill over it. Also, be sure that the brewer is set to 2.8 minutes before brewing.
  5. Place the top back on the airpot before putting it out on the self-serve coffee station.

Repeat steps 1-5 for each coffee
